Set along the sweeping curve of one of the world’s most iconic beaches, Fairmont Rio de Janeiro Copacabana offers a front-row seat to the city’s most enduring spectacle: sun, sea, and the hypnotic rhythm of Rio itself. The location is undeniable. Step outside and you’re immediately immersed in the pulse of Copacabana, with Sugarloaf rising in the distance and the Atlantic stretching endlessly before you.

The hotel’s 375 rooms and suites are designed with a clean, contemporary sensibility that will feel familiar to travelers accustomed to upscale American chains. While the décor leans more functional than transportive, the ocean views are the real draw, often becoming the defining feature of the stay. Here, it’s the horizon that does the heavy lifting, especially from the rooftop pool, with its cinematic vantage point over Copacabana. A fully equipped gym. surprisingly rare among many boutique hotels, offers a welcome convenience for travelers looking to keep up their routine.

Where the Fairmont truly distinguishes itself, however, is at Marine Restô, its signature restaurant. Executive Chef Jérôme Dardillac. now overseeing Fairmont’s luxury portfolio in Rio, brings a style that marries classical French technique with vibrant Brazilian ingredients and coastal influences, shaping a menu that feels both refined and distinctly of place. The meal begins thoughtfully, with natural fermentation cornbread served alongside Brazilian olive oil and a citrusy requeijão, finished with fleur de sel from Mossoró — rustic yet refined. The goat cheese salad with açaí vinaigrette strikes a delicate balance between sweet and savory, its confit tomatoes and salted peanut brittle adding both texture and intrigue. Equally compelling is the organic beetroot salad, elevated with Brazilian cheese foam, honey from the Amigos da Terra Apiary, native bee pollen, and a scattering of Brazilian nuts — a dish that feels deeply connected to place.
For mains, the fish of the day, sourced from the Z13 Fishing Colony, arrives succulent and expressive, infused with the flavors of Bahia and paired with mashed plantain, cabbage crisp, and peanut farofa. The house specialty, picanha in Josper, is a richer affair — tender, deeply flavored, and complemented by a guaraná-infused demi-glace, baião de dois, and roasted garlic.
Dessert provides a moment of theater. The Brazilian cocoa to chocolate arrives as a sculpted cocoa bean, accompanied by a small mallet. A gentle tap cracks the shell open to reveal a hidden assortment of chocolates and confections within — playful, interactive, and undeniably memorable.
